Dom Perignon Wine


Dom Perignon is a trademark of vintage champagne production of champagne house Moët & Chandon and is that the prestige of Champagne houses. It is named in honor of Dom Perignon, a Benedictine monk who was a pioneer in an important quality for wine of Champagne, but which, contrary to myth, do not open the champagne method of making sparkling wines.

Dom Perignon (1638-1715) was a monk and cellar master in the Benedictine monastery in Hautvillers. He was the first to blend grapes, thus, to improve the quality of wine and solve a number of shortcomings, in 1670. He also introduced the cork, which were attached to bottles with hemp string soaked in oil to preserve the fresh and sparkling wines, and used the thick glass to enhance the bottles (which were prone to explode at the time). Development of sparkling wine as the main style of production in the Champagne happened gradually in the nineteenth century, more than a century after the death of Dom Perignon in.
Dom Perignon was the first prestige cuvée champagne, introduced the idea proposed by Englishman Laurence Venn. [2] The first harvest Dom Perignon was 1921 and was only released for sale in 1936.
The first buyers of Dom Perignon 1921 was 150 clients Simon Bros and Co, the company Moët, that imported in the United Kingdom, which ordered the first 300 bottles. Wines have received immediate attention in the market and 100 boxes were shipped to the United States shortly thereafter. James Buchanan Duke, the billionaire who founded the American Tobacco Company, ordered 100 bottles for themselves. 17 bottles sold at Christie’s auction in New York in June 2004 were part of this order (Doris Duke, the daughter of a billionaire, kept them in the cellar). By Dom Perignon cellar master Richard Geoffroy, 1921 vintage was “a special bouquet of sandalwood, vanilla and praline”.
Until 1943 grapes, Dom Perignon was made by regular and vintage Moët Chandon champagne, which were transferred to a special 18th-century style bottle after long-term cellaring. Thus, it was effectively “Enoteca” liberation Moët Chandon Vintage Champagne and another bottle. Since 1947, grape, Dom Perignon was prepared separately from the outset.
Currently Production :
About 5 million bottles produced in each crop. [2] of wine by 60% Chardonnay and 40% Pinot Noir, with 6 g / l dose. [2] According to Tom Stevenson, “All crops need at least 12 years of aging to bring up the signature of Dom Perignon in a silky mousse. [2] In 2010, the current release of Dom Perignon from 2002 vintage [5], and the current version of Dom Perignon rose from 1998 vintage.
Currently (2010) is the winemaker Richard Geoffroy, who was chef de cave of Dom Perignon for from 1998.
